Location: Oslo, Norway

Competitive Salary: 540 000 - 690 000 NOK (Depending on experience level).

Position: Full-Time / PermanentExpert in traditional techniques including milk reduction (Khoya), complex sugar syrup consistencies (Ek Taar/Do Taar), and luxury presentation. Proven track record of managing kitchen operations, food safety compliance, and recipe innovation. Seeking a Senior/Head position in Oslo to deliver premium South Asian confectionery at an executive standard.This is a high-level role for a specialist who possesses deep technical knowledge of traditional South Asian sweets and the ability to maintain premium quality in a boutique environment. You will be responsible for the end-to-end production process, from sourcing ingredients to final artistic presentation, while ensuring strict adherence to Norwegian food safety standards (Mattilsynet).

Arbeidsoppgaver

Key Responsibilities

Master Production: Oversee the daily creation of high-quality Mithai, including Bengali sweets, milk-based delicacies (Khoya), and nut-based confectionery. Traditional Ghee-based Mithai, and modern Fusion Desserts

Recipe Innovation: Adapt traditional recipes to local Norwegian ingredients (high-fat dairy and local sugars) without compromising authentic taste.

Quality Control: Maintain exact standards for texture, moisture content, and shelf-life stability.

Kitchen Leadership: Manage a small team, provide training in traditional techniques, and oversee inventory and cost control.

Compliance: Maintain a high-standard HACCP environment, ensuring all kitchen documentation is up to date for local health inspections.

Requirements & Qualifications

Experience: Minimum 5--12 years of experience in specialized Mithai production, ideally in a reputable boutique or high-end restaurant.

Technical Skills: Mastery of sugar syrup stages (Ek Taar, Do Taar), milk reduction, and artisanal garnishing.

Education: A culinary degree or a documented history of apprenticeship under a Master Halwai.

Language: Proficiency in English is required. Knowledge of Norwegian is a plus but not mandatory.

Management: Experience in food costing, waste reduction, and kitchen management is essential.
