Frati søker sous chef
We are looking for a skilled and committed sous chef who loves working with meat. The everyday tasks will include preparing the fresh dishes from the a la carte menu, following the HACCP-system requirements and collaboration with the head chef and training new staff.
Working at Frati:
You must be service minded, structured and tidy. In the kitchen, you can count on hectic days and should enjoy high speed. We are looking for you with a positive attitude, and who contribute to a good working environment. Our restaurant has a flat hierarchy and you should enjoy motivating the kitchen staff to not only do their best at work, but also be good co-workers and lead by example and care about your staff.
Frati is an exciting restaurant to work for. We brew our own beer, have pasta production, herb garden and are proud to have one of Trondheim's best wine list. By 2021 we are also hoping to install our very own distillery. A sous chef with us should be responsible and have a good knowledge of Italian food, and at the same time have a good mood in a busy working day. We are especially looking for you who take your job seriously and who see the importance of good team work and stucture in the kitchen.
**Opening hours:**We are usually open Monday - Saturday from 11 and Sunday from 13.30. The kitchen closes at 23:00. Due to the covid operation, the restuarant is closed, but we aim for normal operation by the end of April.
Opening hours before closing 25.03: Tuesday-Saturday from 15.00 and Sunday from 13.30.
By the way, we are closed for a few days around Christmas and Easter, otherwise we are open all year :)
About the position:
We are looking for a skilled sous chef who can work around 150 hours per month. During june-august we expect that you can pick up more shifts. You must be able to work 2 of 3 weekends and mostly evening shifts.
A sous chef at Frati is the right hand of the head chef, so a requirement for the position is good match with the head chef as well as earning the respect of your co-workers by leading by example. All leaders with our restaurants are enrolled in the Frati leadership program where you will be given necessary tools to understand your leader role even better.
Tasks:
- preparing food from the a la carte menu, espeicially the grill section
- following the HACCP-system requirements
- training of new staff
- follow-up conversations with staff
- order of goods and food
- storage control and inventory
- help to keep our food concept and develop the menu
- assure a good collaboration with general manger, floor manager
- assure a good collaboration between the pizzeria and kitchen
Responsibilities
- Prepare food according to recipies and instruction
- Taste your food before sending it out
- Control of the kithcen during you shift and food dockets. At busy night you will have supiervisor shift.
- Preparing food in time with other chefs / collaboration
- Following daily routines
Qalifications:
- Well-documented relevant experience as pasta/starter/grill chef, min 2.years
- Only applicants with min. 2 years relevant experience will be considered
- Previous leader experience is considered a benefit
- Able to speak and be understood in English
- Good ability to mulitask thru reading dockets, preparing food and communicate

In 1973 we opened an Italian restaurant that became the first trattoria e pizzeria in Trondheim. The restaurant is family driven, and established by two Italian brothers from Molfetta. They deamed to give Trondheim the Italian spirit thru food, wine and service. Italian cuisine is therefor the heart of Frati - with multiple delights such as pasta, pizza, meat and fish dishes. At day time, our restaurant makes most pizza and pasta, while the evenings the focus is meat dishes. We also make our own pasta in the restaurant and have our own brewery, ØX Tap Room.
